5 Quick Ways to Eat More Veggies This Summer

It feels like Summer has officially started and many people are going to bust out their BBQs and start grilling up a storm. But before you chow down, do you ever add the veggies? No, ketchup doesn't count! ;)

Just so you know, we are entering my favorite season because so many wonderful fruits and veggies are growing! My favorite summer veggies include:

  • Summer Squash

  • Cucumber

  • Lettuce

  • Tomatoes

  • Carrots

  • Green Beans

  • Beets (Bears. Beets. Battlestar Galactica! Name that show!)

It would be a shame if we let this abundance go to waste! We need to eat more veggies and the ones that are in season tend to have a better quality, taste and price!

To help you out, here's FIVE ways that we can sneak more veggies into our food to take advantage of them. 

  1. BLEND THEM! Whether it's a green smoothie or a protein shake, you can always boost the nutrition by adding fresh vegetables. My favorite add-ins are kale, spinach or even beets!

  2. CHOP THEM! When you finely chop your veggies, it will even out the taste. Try putting a finely shredded vegetables in your next salad! 

  3. ADD TO SAUCE! When I make spaghetti sauce, I try to add as many vegetables as I can. Adding them at the end will keep a lot of the nutrition but you can add the veggies at any time.

  4. DIP THEM! When I was growing up, I dipped my carrots and celery in ranch. But my goal was to get as much ranch on that little carrot as possible! Nowadays, I love using healthier dips in moderation like hummus!

  5. WRAP WITH THEM! Have you ever tried substituting bread or rice for lettuce? It's amazing and it's a great way to cut out extra calories and get in more vegetables. My favorite is wrapping with a big piece of lettuce instead of bread or tortilla.
